Mmmmm........................Maple!

Maple Carrot Muffins
Yield: 12 medium-sized muffins

50 ml butter or margarine (1/4 cup)
1 egg
175 ml maple syrup (3/4 cup)
250 ml milk (1 cup)
250 ml grated carrots (1 cup)
250 ml rolled oats (1 cup)
300 ml flour (1 1/4 cups)
15 ml baking powder (1 tbsp)
2 ml each, salt and allspice (1/2 tsp.)

Beat butter, egg, and syrup. Add milk, carrots, and oats; blend well. Sift flour, baking powder, salt, and allspice. Combine the two mixtures. Fill muffin cups 3/4 full with batter. Bake at 200 degrees Celsius for 20-30 minutes.


French Toast with Maple


6-8 slices of bread
3 eggs
125 ml maple syrup (1/2 cup)
250 ml milk (1 cup)
50 ml light cream (1/4 cup)
pinch of salt, dash of nutmeg

Beat eggs with maple syrup. Add milk, cream, salt, and nutmeg. Dip bread, one slice at a time, into maple mixture then drain and fry in a hot buttered pan on both sides. Top with pure maple syrup.


Wild Blueberry Crisp with a Touch of Maple
Yield: 6 servings


750 ml wild blueberries (fresh or frozen) (3 cups)
125 ml pure maple syrup (1/2 cup)
5 ml cinnamon (1 tsp.)
75 ml cornstarch (1/3 cup)

Topping
375 ml flour (1 1/2 cups)
250 ml brown sugar (1 cup)
125 ml butter or margarine (1/2 cup)
5 ml almond flavouring (optional) (1 tsp.)

Combine blueberries, syrup, cinnamon and cornstarch. Spoon into a 20 cm well greased baking pan. Mix flour and sugar. Cut in butter until mixture resembles course bread crumbs. Stir in almond flavouring. Spread topping evenly over berries. Bake 25-30 minutes at 200 degrees Celsius. Cool; sprinkle with icing sugar. Serve with ice cream or whipped cream.


Nova Scotia Maple Chicken
Yield: 4 to 6 servings


1 kg chicken pieces (2 1/2 lbs)
125 ml pure maple syrup (1/2 cup)
2 ml grated lemon grind (1/2 tsp.)
50 ml chopped almonds (1/4 cup)
pinch of pepper
10 ml lemon juice (2 tsp.)

Remove skin from chicken pieces; place in a shallow, 3L pan. Mix remaining ingredients and pour over chicken. Bake, uncovered, for 50 minutes at 200 degrees Celsius, tasting occasionally.


Maple Pecan Pie
Yield: 6 servings


1 (23 cm) pie shell
50 ml butter or margarine (1/4 cup)
125 ml brown sugar (1/2 cup)
3 eggs, beaten
125 ml pure maple syrup (1/2 cup)
2 ml maple or rum flavouring (1/2 tsp.)
dash of salt
250 ml peacans, halved (1 cup)

Cream butter with sugar, beat in eggs, one at a time. Stir in remaining ingredients. Pour into unbaked pie shell. Bake at 180 degrees Celsius until toothpick inserted into center comes out clean (about 40min). Serve warm or cold.
